I am new to this site and I think it is terrific. You all are doing excellent work. But it would be nice to see real time baiting in action. Is there a place on this site that has that, or is it safer to wait till after the whole thing is over? And can I sort by date in the archives room? Any help would be much appreciated.

I don't think there is a way to sort by date. Regarding reading baits in real time, many baiters do not publicly publish in real time and if they do they have to mask much of the bait to keep a googling lad from finding out they have been had. For this reason many choose not to publish at all or until the bait is done.

Normally one waits at least several weeks after the bait ends to publish it, in case it only seemed to end because the lad was on safari. I once broke that rule, publishing a conference bait shortly after it was over, because I knew from the start what day it would end (the scheduled date of the fake conference).

There is real time baiting in Scambaiting Help and Tips, and the Main forum.
Perhaps a bit more extensive ones in the former.
Click on a few and see what tickles your funny bone. Maybe you won't get hooked into baiting, but don't count on that.

Here's one example, maybe not every tedious email but the thread was set up for educational purposes and had a lot of involvement from inexperienced baiters, as well as discussion about tricks and tips along the way: "Mass Bait With HH&T" (HH&T = Help, Hints & Tips forum)

As you will see this thread stretches to 76 pages at present, this gives one indication of why "real time" baits are not frequently posted --- there can be so much tedious emailing back and forth before anything interesting happens. While this thread does not include all the emails people have sent, there are a lot of posts describing the way different baiters approach it, as well as different ways to deal with the usual challenging points in dealing with scammers.

Also, keep your eyes open for threads with "Massbait" or similar in the title. These regularly crop up and provide an opportunity for many baiters to work the same scammer together. Discussion in such threads (as in the HH&T example above) provides at least some insight into what's going on in real time.

^^^I am a big fan of the thread above and firehouse5 has done some great work in it, among others. Honestly, real time baiting is almost impossible. The logistics behind emailing the lad and posting messages from the lad and baiter while it is taking place are huge. That being said, many baiters, myself included, do our best to post exchanges on the same day or close to it. The Romance Forum is a great place to see that in action.

Once, I attempted a bait in real time and it was time consuming, leading me to only baiting one lad.

Very true and especially when I post....If I wait a few days or weeks I find the Baits very hard to organize so I usually post as I go; within a few hours or less. Obviously that isn't always possible but it does help me to organize and make sense of the whole mess plus it gives me a good reference to look back upon when questioned by a Lad.

All of my baits in the romance section are usually posted as I go. The Pig$ bait in main is posted the same. Well, except currently as I'm a tad behind. All of the names are changed so there's really no reason to wait to post it.
